I am not Italian and I can't say I have eaten gnocchi many times in my life. In Sweden - among many other countries - we love pasta, but I had never experienced hearing people eating gnocchi in Sweden. One day I got the chance to eat gnocchi. It was actually at a food event in Stockholm a few years ago, and I really liked it. The food I ate then was luxurious food, but today I want to show you a gnocchi recipe that is more of comfort food. This is food that is simple to make, that makes you feel good and that understands. Today y'all, I want to show you my vegan gnocchi pomodoro gratin.
So let's start with the basic - what is gnocchi? Gnocchi is thick dough-alike lumps that are created of wheat, semolina, potato, sweet potato, bread crumbs or other. This is an Italian dish and it can be made in lots of different ways depending on who makes it and what region of Italy you get your gnocchi from. They are most often homemade in the Italian and Italian-immigrant households, and therefore I'm a bit ashamed today to share the following: mine are bought.
No I will not share a gnocchi recipe made från scratch today. My gnocchi was included in a monthly vegan organic grocery bag you can receive in Sweden, with ingredients and recipes for you to make. However, I didn't like their gnocchi recipe and started to think about what I could make of the remaining, left-over gnocchi, instead. Because the gnocchi itself was organic, vegan and delicious, and I felt I had to take advantage of these golden pieces (metaphorically speaking) to make a new dish. The result is my gnocchi pomodori gratin.
To be honest, I forgot to weight my gnocchi before putting them in the oven pan but I know it was approx 7 dl. It's alright, you can take a little bit less or a little bit more than that. It doesn't make the recipe worse in any of the ways. Since I don't have a gnocchi recipe for you to make from scratch (at least not in this post) you can buy one in store, ask your Italian friends for it or make one yourself with a recipe from google. If you just google "gnocchi" you will find loads of various gnocchi recipes.
Vegan Gnocchi Pomodoro Gratin
approx 7 dl gnocchi
1/2 yellow onion
400 g crushed tomatoes
2 garlic cloves
1 tsp paprika powder
1/2 dl chopped parsley or basil
Salt and black pepper
1 dl grated vegan cheese
Heat oven to 200 degrees C.
Pre-boil your gnocchi for a few minutes if they aren't already boiled. I didn't need to do that.
Cut your onion into small pieces.
Heat a frying pan with a little bit of olive oil. Add the onion and press the garlic cloves, and fry until the onion is soft.
Add the crushed tomatoes, a little bit of water and all the seasoning. Combine it all with a big spoon and then let it simmer for at least 5'. Taste and add more salt if needed.
Brush a little bit of olive oil in a rectangular oven pan. Spread out the gnocchi in the pan and pour over the tomato sauce. Spread it out evenly over the gnocchi.
At last, spread out the grated cheese. Place the gratin in the oven for approx 20'.
Serve if you'd like with fresh basil or a little bit of fresh finely chopped parsley.
